Dustin Taylor was recently hired as the executive chef of AC Hotel Los Angeles South Bay.
1. What are you looking forward to the most in your new role?
I'm excited to open the rooftop lounge because it allows me to get back to the food I love to do, which I trained for while I was in New York City. And I'm looking forward to continuing to build personal relationships with local vendors and farmers.
2. How do you think past experiences have prepared you for this role?
I have been prepped for this moment my entire career. There is the perfect balance of high volume from our hotel-branded food - to the complete creativity that will happen at Flora.
3. How did you get into the industry?
It has been a long road of over 20 years. I was your typical rebel kid and it started as a necessity of survival. Then I fell passionately in love with the heartbeat of the service and flow of the day-to-day.
4. What are you hoping to achieve in your new role?
In this role, I am looking forward to joining the progression of South Bay and El Segundo, as it is starting to be a destination for a craft food and beverage program.
5. What do you enjoy most about the industry?
I love all aspects of this industry. Particularly, the relationships that you build with people, from the farmers to regular customers. There is so much value in surrounding yourself with people that understand this passion on different levels.
